The lazy-butt food post

I was scoping out Michael's the other day with the kids, and of course when they saw these they just had to have them. Who am I to stand in the way of footed cupcake holders? Nevermind that we had absolutely no cake mix in the house or frosting. (Um, did I just out myself? Yeah, well, I hardly ever cook from scratch anymore). So almond poppyseed muffin mix, some nutella and sprinkles, and there you go kids. Eat up.

By the way, speaking of lazy-butt (or frazzled-butt) meals...tonight's dinner was left over pot roast, a few cups of water, some onion soup mix and instant potatoes. Voila. Beefy potato soup. It was actually pretty good if I do say so myself. It rivals the lazy-butt meal of last week which was throw two cups of rice in the rice cooker and when the button pops up, dump a can of beef vegetable soup and stir it around. I crack myself up.

My sister's lazy-butt meal (hi Linda!) is ground beef with a can of cream of mushroom soup served over rice--beef stroganoff. Yum.

And I just open the fridge and eat straight from the shelves. Grazing and browsing, people! Because some days, if it involves a plate, it's too much effort.

Lazy-butt food- that's great :) Mine is baked beans (or spaghetti) on toast, with cheese. I eat this far too much!

Oh my, I could write a Lazy Butt Meal cookbook. Like the others, take-out tops the list. Once I opened a couple of cans of Chef-boyardee ravioli, dumped it in a casserole dish with cheese and jalapenos on top, microwaved and voila, Ravioli casserole.

Salmon patties are pretty easy, canned salmon, some seasonings, an egg and some bread torn up. My kids LOVE them! I serve with boiled new potatoes, also easy!

Of course, my kids also love Ramen noodles and my son is old enough to boil his own hot dog or open a can of tuna. That's always nice.

Love the cupcake holders, those are CUTE!

I love the idea about the lazy butt meals. Since it's just me and the kids it's not even worth it to really cook. Lazy meal for me was cook frozen chicken patties in oven and put it on a burger bun with mayo, ketchup and a leave of lettuce. There you go. Now, how about that recipe book there, Autum?

we schedule a 'scrounge' night about once a week - you eat what you can find - cereal, sandwiches, etc.

and we have breakfast for dinner quite often, too. everyone loves french toast, so that's good.

Pancakes (from a mix). Although, I think tonight might be a frozen-french-toast-stick night ... I need to make room in the freezer. With hubby out of town, I can feed my kids breakfast for dinner. Regularly.

My last lazy butt meal was paella. Fake but not bad. 1 batch of saffron rice made in my beloved 3 cup rice cooker, then when it was done I mixed it with 1 can of chopped clams (and a little of the clam juice for added flavor), a tiny jar of pimentos, some chopped up scallions and then used the heat from the rice to finish cooking some shrimp.

I love your ideas for lazy-butt meals. You should make it a feature on your blog.

Because of my pregnancy, I haven't cooked in months. Take Out has been a constant, but we are getting sick of it. I popped some frozen fish sticks in the oven last night for hubby's dinner, while I had a salad.

My lazy-butt meal used to be Kraft mac and cheese. That's when I was pregnant and still working. And my husband's lazy-butt meal during that time was a can of kidney beans, heated up, in a bowl with Ritz crackers. Eeew! But he doesn't like mac and cheese. Well, now, four/five years later, I cook a lot more bc I'm at home more. Still, I have those nights I don't want to cook much. Usually we have pancakes and sausage on those nights. But I still have to make my pancakes from scratch.

So do they just hold the cupcakes or do you cook the cupcakes in them? They're "too cool for school"!

This is the first meal I ever learned how to cook:

ground beef (marinated as desired)
frozen veggies, defrosted
oyster sauce

When the button pops up on the rice cooker, dump in the beef, veggies, and oyster sauce. Mix well. Close the rice cooker and let the mixture "steam" itself for about 10 minutes.

Our lazy meal is hamburger helper and a can of tuna.

Or a can of chef boyardee and a can of corn.

My hubby is a really good cook, so he cooks most nights. I guess you can say I am lazy pretty much every meal:) (Although I dread when we have kids, because that is going to mean that I actually have to learn how to cook...)

Here's an even lazier meal, made up by hubby. Spaghetti without the sauce. Cook up some ground beef and serve it up on noodles. Looks gross, but the kids love it.

Btw, I remember eating the soup and rice deal in college. It tasted SO good! And it brings back happy memories. I think I tried making it once and the kids wouldn't eat it. What's wrong with them?

Boil some pasta, when it's almost done drop in some frozen cut asparagus (or broccoli, or peas...), bring it back to a boil to get the veggies unfrozen, drain and toss with some olive oil and parm. Done in under 15 minutes. Tah-dah! It's my comfort food, and because there are veggies in it I can convince myself that it's legit.

Mmm...they look yummy. I just bought supplies at Michaels to make a Scooby Doo cake for James' birthday next weekend. It cost over $30 for everything! I hope it turns out ok, I've never frosted anything with those tips, we'll see.

My favorite lazy-butt meal is McCormicks original chicken in a bag seasoning mixed with one can of water and one can of cream of mushroom soup. Then just throw in some chicken and put it in the oven for an hour. It was my dad's recipe and still a favorite. And it has to go with mashed potatoes (Bob Evans microwavable of course) to use up all the yummy gravy.

Mine is nacho's...a bag of frito's, a jar of nacho cheese, chopped lettuce, tomato's, sour cream and if I'm really into it I'll brown hamburger. The kids love it when I do this.

Anything stir fried. I've eaten so much fried rice, lo mein, etc since the kids have been gone, I'm starting to get sick of it. They've asked for me to cook Chinese their first night home (2 weeks to go!). Oy.

I have to say I'm often found eating breakfast cereal in the evening. Rice krispies with full fat milk and loads of sugar for supper, just the best !

Lazy-butt beans: 2 cans of pinto beans (rinsed), a quirt of KC Masterpiece bbq sauce, a can of diced tomatoes, and a couple handfuls of frozen pre-cooked meatballs. Microwave until meatballs are hot. If your significant others will eat onions (mine won't) you can fold in some diced onion.

Even lazier-butt beans: 2 cans of pork and beans and the meatballs (but not nearly as good)
